Our Akatsuki series is designed for those who appreciate the rustic charm of traditional Japanese kitchen knives. Featuring a kurouchi (black-forged) finish and a beautifully grained olive wood handle, each knife combines timeless craftsmanship with natural elegance.

The blade is crafted from Blue Steel #2 (Aogami #2), a high-carbon steel renowned for its exceptional sharpness and excellent edge retention. It is an ideal gift for those who appreciate authentic Japanese craftsmanship and the distinctive performance of traditional carbon steel knives.

The Akatsuki series is available inSantoku and 210mm Gyuto styles. Both are versatile, all-purpose knives capable of handling most everyday kitchen tasks. For many home cooks, either one is all they need for preparing meat, fish, and vegetables.

Please note that Blue Steel #2 is a high-carbon steel and is not stainless. To keep the knife in excellent condition, wash it by hand, dry it thoroughly after each use, and avoid leaving it wet for extended periods. With proper care, it will reward its owner with outstanding cutting performance and the unique satisfaction that only a traditional carbon steel Japanese knife can offer. As a corporate gift, it is a meaningful way to express appreciation with something both practical and enduring.

From petty and paring knives to gyuto and santoku knives, we have one for all needs. Even sujihiki and honesuki knives are available!

Using our special FV10 variant of VG-10 steel, these knives are excellent all-rounders that cut well, and stay sharp for a long time.

The indigo-blue wood handle adds a lustrous and comfortable touch which darkens over time. This creates unique, individual coloring on each knife over the years.

Granton Edge variants are also available for most models.

Our G-LINE series has been a mainstay of ours for decades, made through the result of trial and error plus feedback from chefs.

Showcasing quality, perseverance, and over anything else cost performance, the G-LINE is particularly popular in restaurants and is often found as the backbone of professional kitchens.

Using VG-1 stainless steel, this series excels in staying sharp for a long time, and being slightly more robust than our other knives.

We also carry single-edged version of G-LINE knives, such as deba and yanagiba (sushi) knives, allowing for combinations that still stay thematically the same, yet vary in blade geometry.

Our JIN series is our latest series to use high-speed powdered tool steel in our lineup, specifically SLD steel.

Designed with cutting power as its focus, these knives are well priced, cut amazingly, and have a slightly rustic finish with their olive wood handles.

These are also cladded knives, with a slight line seperating hard and soft materials near the blade of the knife, adding a touch of class.

These knives excel at having very easy-to-see engravings, making them perfect for orders containing corporate logo engraving.

Our JIN series is the only series with a ko-santoku, combining the functionality of the santoku with the size of the petty.


NAME AND LOGO ENGRAVING OPTIONS

Add a finishing touch to each of your knives with our engraving services - many of which are free! See our options below.

Our engravers will chisel each knife individually by hand in English or Japanese. We can translate names into Japanese as well.

This service is free, and can be done individually (each knife with a unique name).

This engraving style looks best in Japanese on cladded knives, and can be easily felt with one's fingers. Depending on the knife, this engraving style reflects beautifully in some lighting conditions.

Please note mono-steel knives, and the back side of single-edged knives cannot be chiseled.

Our engravers will write into each knife individually by hand with a rotary tool in English or Japanese.

This service is free, and can be done individually (each knife with a unique name). This looks best with English on mono-steel knives or knives with rustic finishes, but Japanese also looks amazing.

For those seeking a cursive, handwritten feel of engraving reminiscent of pen to paper, this is the best choice.

Please note, the back side of single-edged knives cannot be engraved with a rotary tool.

Using our own laser engraving machine with concentrated beams of light, we will etch a name into a knife in Japanese or English.

We have multiple different typefaces in English and Japanese to choose from.

This service is free, and can be done individually (each knife with a unique name). This looks great in English or in Japanese, and has the least amount of location restrictions.

Importantly, laser engraving can be done on the back of single-edged knives.

If you have a custom image like your company logo you want to engrave onto your knives, we can do this via laser!

You can pick the size, alignment, and location to maximise impact.

This service has a one-time setup fee and per unit fee, but bulk discounts may apply! Ask us for further details.

This service is free on all knives that we sell.

All Sakai Ichimonji Mitsuhide knives come in one of two standard boxes, designed to offer a fun unboxing experience.

Our traditional grey box with gold accents bearing our company name has been our standard box for years, often used with Japanese-style knives.

Our modern black box with gold accents bearing our company logo is award-winning, and its minimalistic feel pairs well with our Western-style knives.

Please note, standard box choice depends on our knife length and availability, and cannot be specified.

For certain types of knife we also offer a premium paulownia gift box as a premium extra.

Synonymous with high-quality gifts, this type of box stems from ancient Buddhist rituals and practices.

This premium option is also lightweight, repels insect, and resists heat and moisture, making it perfect for kitchen knives.

Please note these gift boxes are only compatible with a selected range of our knives, and add extra lead times.

Quotations are valid for one week from issuance, and exclude all import duties and customs taxes.

Delivery times will vary, depending on the size of the order and current blacksmith demand. Expect shipping to take approximately one business week after it leaves our store, unless the destination is within Japan.
