Our Stainless Octagonal Series harmoniously links Japanese and Western-style knives together. Our handle combines a stainless steel material with a modern interpretation of the classic Japanese octagonal handle. This makes the handle light and comfortable while staying easy to clean. Like our G-Line series, we make and process these blades with VG-1 stainless steel. This allows for smooth cuts and good edge retention. This series is highly recommended for people who cook for long periods and worry about food hygiene and sterile environments.

Petty knife or Petit knife is ideal for detailed food preparation such as peeling, slicing and decorative work.The blade size can vary from 120mm to 150mm and is quite light in hand. Professional chefs often use the short 125mm blade for peeling and cutting. For home use, the 150mm size is popular.

Stainless Steel
VG-1 makes its mark as a reliable stainless steel, which we've made knives with for decades. Its key feature is a high hardness level, which also means longer edge retention. A well-made VG-1 knife will have excellent sharpness compared to other stainless steels as the raw materials contain very few impurities. While the high hardness makes sharpening a little difficult, it also makes a knife that can cut well for a very long time. We recommend this steel for people who do longer cutting sessions and don't want to sharpen during those processes.

Making knives with a single steel type requires expert attention during the manufacturing process to ensure the blade does not become overly brittle or warped. Differentiating a high quality Mono-Steel Blade from a low quality Mono-Steel blade can be quite difficult at a quick glance.
