What is a Fugubiki / Fuguhiki Knife?

A Fugubiki or Fuguhiki Knife is a Japanese knife which is thin and long, used to slice fish. This knife is like Yanagiba or Takobiki Knives, but thinner and lighter. As fugu has meat that is harder than other fish, the knife is more special-use. Brilliantly for thin slices, these work anywhere where presentation is key, or the mouthfeel behind a very thin slice of fish.

Other than Fugubiki, there are many types of the knives that are similar and used in the same way as Fugubiki such as Takobiki and Yanagiba knives. There are some slight differences on shape, size, and weight. Chefs can choose based on personal preference.
