Tan Series

"Tan" 淡 means simple in Japanese. Like our Sazanami range, our Tan series has a Damascus pattern and a Tsuchime (hammered) finish to emphasize the blade's beauty.

This is a series of stainless clad knives. The core blade is made of AUS8 stainless steel, which is then sandwiched between other stainless steels. Cladding makes the knife stronger and allows for patterns on the blade's exterior without compromising the blade's quality.

Petty

Petty knife or Petit knife is ideal for detailed food preparation such as peeling, slicing and decorative work.The blade size can vary from 120mm to 150mm and is quite light in hand. Professional chefs often use the short 125mm blade for peeling and cutting. For home use, the 150mm size is popular.

AUS-8

Also known as 8A, molybdenum steel and other names, AUS-8 is rust-resistant and easy to sharpen. Recommended for newcomers to the kitchen knife world.

Stainless Steel

AUS-8 Steel is a standard stainless steel that is often used in knives due to its corrosion resistance and ease of sharpening. It's lower hardness levels compared to other steels like Silver Steel #3 and VG-10 mean that it will be easier to sharpen and less likely to chip during use. Sakai Ichimonji Mitsuhide's AUS-8 knives have improved sharpness and edge retention due to our special quenching processes.

Damascus Pattern

It is made by forging two types of steel with different hardness together. Bending and overlapping them in layers, and then polishing the blade to reveal the pattern formed. The harder steel shines, while the softer steel remains dull, creating a unique pattern on the surface that resembles wood grain. This ripple pattern is called Damascus steel and has become popular in the kitchen knife community.
