What does Akatsuki mean?
Named after 暁 (akatsuki), the kanji for dawn or daybreak, this series represents the beauty of the transition between night and morning.
The black kurouchi blade contrasted with the bright olive handle mirrors this transition of color, blending strong rustic statements with the grace of a lighter colored handle.
Designed to elevate your kitchen time into a more elegant experience, the Akatsuki turns your everyday cooking sessions into something more refined.
About Akatsuki's Steel
Our Akatsuki series features Blue Steel #2 as its cutting edge core steel. Blue Steel is a high-carbon steel known for its excellent wear resistance and smooth feeling when cutting. Amongst the many kinds of Blue Steel, Blue Steel #2 offers high resistance to chipping, and is easier to sharpen than other Blue Steels like #1 and Super.
We recommend Blue Steel #2 to those new to sharpening or Japanese kitchen knives, who want to experience the cutting experience Japanese chefs are used to, in a slightly easier to care for way.

About Akatsuki's Finish
The Akatsuki series uses a kurouchi finish.
Kurouchi is a finish created by leaving black residue on the knife after the forging process, which increases rust resistance and provides a rustic look to any knife it is on. As kurouchi is a process created as a result of hand forge-welding, each Akatsuki will look slightly different, making every knife in the series truly unique!
This style of finish changes over the lifespan of the knife's usage, creating unique bumps and imperfections in the knife's appearance.
About Akatsuki's Handle
The Akatsuki series uses olive wood for its handle, in an octagonal configuration without a bolster. This handle is the same handle both in shape and material as our best-selling Jin series.
Olive wood is a dense wood, known for its beautiful patterning ability, resistance to stains, and hygienic properties.
Like other Japanese-style handled knives, the handle is fully replaceable if issues arise, and you can do this at home by reading and following out how-to guide.
