Mukimono

Mukimono Knife is a small version of Usuba Knife (Mukimono Knife in our store is Kamagata type). Usuba Knife has blade length from 150 to 240mm while Mukimono has blade length from 105mm to 135mm. Both of them are widely used for all kinds of vegetables such as peeling, chopping, dividing, and shaving. Furthermore, Mukimono is said to be a ideal garnishing knife because it is small, extremely thin and ground very sharp. Japanese chefs use them for decorative work such as shaving fruits and vegetables in complex shapes or long peeling very thin skin of radish with no breaks.
