Petty
Petty knife or Petit knife is ideal for detailed food preparation such as peeling, slicing and decorative work.The blade size can vary from 120mm to 150mm and is quite light in hand. Professional chefs often use the short 125mm blade for peeling and cutting. For home use, the 150mm size is popular.
ZA-18
Stainless Steel
ZA-18 is a modern Japanese Stainless Steel used exclusively for knifemaking. The steel has high concentration of Cobalt, making it harder and more corrosion resistant than many other steels available on the market today. It has fast become the knife steel of choice for kitchen knife enthusiasts around the world.
Damascus Pattern
It is made by forging two types of steel with different hardness together. Bending and overlapping them in layers, and then polishing the blade to reveal the pattern formed. The harder steel shines, while the softer steel remains dull, creating a unique pattern on the surface that resembles wood grain. This ripple pattern is called Damascus steel and has become popular in the kitchen knife community.
